Citrus & Herb Coleslaw
A refreshing twist on classic coleslaw with a tangy citrus and fresh herb dressing, perfect for summer picnics and barbecues.

Ingredients
1 medium green cabbage, shredded
1 medium red cabbage, shredded
2 large carrots, julienned
1/2 bunch fresh parsley, chopped
1/2 bunch fresh dill, chopped
1/4 cup fresh lemon juice
1/4 cup fresh orange juice
2 tbsp apple cider vinegar
1/3 cup olive oil
2 tbsp honey
Salt and pepper to taste
Instructions
1. In a large bowl, combine the shredded green cabbage, red cabbage, and julienned carrots.
2. In a separate small bowl, whisk together the lemon juice, orange juice, apple cider vinegar, olive oil, and honey until well combined.
3. Add the chopped parsley and dill to the dressing and stir to incorporate.
4. Pour the dressing over the cabbage and carrot mixture and toss until the vegetables are thoroughly coated.
5. Season with salt and pepper to taste, and let the coleslaw sit for at least 30 minutes in the refrigerator to allow the flavors to meld.
Storage
Store the coleslaw in an airtight container in the refrigerator for up to 3 days.
Reheating
Coleslaw is best served cold and does not require reheating.
