Cinnamon Raisin Bread

Ingredients

4 cups all-purpose flour
1/3 cup granulated sugar
2 1/2 teaspoons active dry yeast
1 1/4 teaspoons salt
1 teaspoon ground cinnamon
1 1/4 cups warm milk
1/4 cup unsalted butter, melted
1 large egg
1 cup raisins
1 tablespoon vegetable oil
1 additional teaspoon ground cinnamon for dusting
1 tablespoon melted butter for brushing

Instructions

1. In a large bowl, combine the flour, sugar, yeast, salt, and cinnamon.
2. Stir in the warm milk, melted butter, and egg until a soft dough forms.
3. Knead the dough on a floured surface for about 8 minutes until smooth and elastic.
4. Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
5. Punch down the dough and knead in the raisins until evenly distributed.
6. Roll the dough into a rectangle, sprinkle with additional cinnamon, and roll it up tightly into a loaf.
7. Place the loaf in a greased 9x5 inch loaf pan, cover, and let rise again for 30 minutes.
8. Preheat the oven to 375°F (190°C).
9. Brush the loaf with melted butter and bake for 35-40 minutes until golden brown and the bread sounds hollow when tapped.
10. Cool on a wire rack before slicing.

Storage

Store in an airtight container at room temperature for up to 4 days. For longer storage, freeze wrapped in plastic wrap and aluminum foil.

Reheating

To reheat, wrap slices in a damp paper towel and microwave in 10-second intervals until warm, or toast slices for a crispy texture.
