Cinnamon Apple Spice Cake

Ingredients

2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk
2 cups peeled and chopped apples
1/2 cup chopped walnuts

Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
3. In a large bowl, cream the butter with the granulated sugar and brown sugar until light and fluffy.
4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
5. Alternately add the flour mixture and buttermilk to the creamed mixture, beginning and ending with the flour mixture.
6. Fold in the chopped apples and walnuts.
7. Pour the batter into the prepared cake pan and smooth the top.
8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
9. Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.

Storage

Store the cake in an airtight container at room temperature for up to 3 days.

Reheating

Reheat slices in the microwave for 15-20 seconds, or enjoy at room temperature.
