Chocolate Lava Cake with Berry Coulis

Ingredients
4 oz bittersweet chocolate
1/2 cup unsalted butter
1 cup powdered sugar
2 large eggs
2 large egg yolks
1 tsp vanilla extract
1/4 cup all-purpose flour
1 cup mixed berries (strawberries, raspberries, blueberries)
1/4 cup granulated sugar
1 tbsp lemon juice
1 tsp lemon zest
Instructions
1. Preheat the oven to 425°F and butter 4 ramekins.
2. Melt the chocolate and butter together in a microwave or double boiler.
3. Stir the powdered sugar into the melted mixture until smooth.
4. Add the eggs, egg yolks, and vanilla extract, whisking until well combined.
5. Gently fold in the flour until the batter is smooth.
6. Divide the batter evenly among the prepared ramekins.
7. Bake for 12-14 minutes until the edges are firm but the center is still soft.
8. Meanwhile, to make the berry coulis, combine mixed berries, granulated sugar, lemon juice, and lemon zest in a saucepan over medium heat.
9. Cook until the berries break down and the sauce thickens, about 5-7 minutes.
10. Remove from heat and strain to remove seeds if desired.
11. Once cakes are baked, let them sit for 1 minute before inverting onto plates.
12. Serve immediately with berry coulis drizzled on top.
Storage
Store any leftover cakes and coulis separately in airtight containers in the refrigerator for up to 2 days.
Reheating
To reheat, place the lava cakes in a preheated oven at 350°F for 5 minutes or until warm. Microwave the coulis for about 20 seconds.
