1 cup creamy peanut butter
1 tablespoon vanilla extract
3 cups certified gluten-free rolled oats
1/4 teaspoon salt

Instructions

1. In a large saucepan, combine the sugar, cocoa powder, almond milk, and vegan butter over medium heat.
2. Stir the mixture continuously until it begins to boil, then allow it to boil for 1 minute, stirring occasionally.
3. Remove the saucepan from heat and immediately stir in the peanut butter and vanilla extract until smooth.
4. Add the rolled oats and salt, mixing until everything is well incorporated.
5. Using a tablespoon, drop the mixture onto wax paper and let them cool completely.
