Chipotle Lime Mexican Rice
A vibrant twist on traditional Mexican rice, Chipotle Lime Mexican Rice combines smoky chipotle peppers and zesty lime for a flavorful side dish perfect for any fiesta or family meal.

Ingredients
2 tbsp olive oil
1 1/2 cups long-grain white rice
1 medium onion, chopped
2 cloves garlic, minced
1 chipotle pepper in adobo sauce, chopped
2 cups chicken broth
1 cup tomato sauce
1 lime, juiced
1/2 tsp ground cumin
1/2 tsp smoked paprika
Salt to taste
1/4 cup fresh cilantro, chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add rice and sauté until it starts to turn golden brown, about 5 minutes.
3. Stir in chopped onion and garlic, cooking until onion is translucent.
4. Add chipotle pepper, stirring to combine.
5. Pour in chicken broth and tomato sauce, stirring well.
6. Add lime juice, cumin, smoked paprika, and salt, stirring to combine.
7. Bring to a boil, then reduce heat to low and cover.
8. Simmer for 20 minutes or until rice is tender and liquid is absorbed.
9. Remove from heat and let sit covered for 5 minutes.
10. Fluff rice with a fork and stir in fresh cilantro before serving.
Storage
Store any leftovers in an airtight container in the refrigerator for up to 5 days.
Reheating
To reheat, add a splash of water and microwave on medium power until heated through, or reheat in a covered pot over low heat.
