Chilled Cucumber and Avocado Soup

Beat the summer heat with this refreshing chilled soup. Creamy avocado and crisp cucumber come together with a touch of lime and mint for a cool, light meal.

Ingredients

2 large cucumbers, peeled and chopped
2 ripe avocados, peeled and pitted
1 cup plain Greek yogurt
1/2 cup fresh mint leaves
1/4 cup lime juice
1 garlic clove, minced
Salt to taste
Black pepper to taste
1/4 cup water or as needed
Mint leaves for garnish
Lime slices for garnish

Instructions

1. In a blender, combine cucumbers, avocados, Greek yogurt, mint leaves, lime juice, and garlic.
2. Blend until smooth, adding water as needed to reach desired consistency.
3. Season with salt and black pepper to taste, blending again to incorporate.
4. Chill the soup in the refrigerator for at least 2 hours before serving.
5. Garnish with fresh mint leaves and lime slices before serving.

Storage

Store in an airtight container in the refrigerator for up to 2 days.

Reheating

Best served chilled, no reheating necessary.
