Chickpea Stew

A warm and comforting chickpea stew that combines the rich flavors of tomatoes, cumin, and fresh spinach. This nutritious dish is perfect for a fulfilling dinner, offering a high protein and fiber content to keep you satisfied.

Ingredients

2 cans chickpeas (15 oz each)
1 can diced tomatoes (14.5 oz)
1 large onion, diced
2 tsp ground cumin
4 cups fresh spinach
2 tbsp olive oil
2 cloves garlic, minced
2 cups vegetable broth
Salt and pepper to taste

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add the diced onion and garlic, sauté until the onion is translucent.
3. Stir in the ground cumin and cook for another minute until fragrant.
4. Add in the diced tomatoes and cook for 5 minutes, allowing the flavors to meld.
5. Pour in the vegetable broth and bring to a simmer.
6. Add the canned chickpeas and cook for 10 minutes.
7. Stir in the fresh spinach and cook until wilted.
8. Season with salt and pepper to taste and serve hot.

Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Reheating

Reheat on the stove over medium heat until warmed through, or microwave in a microwave-safe container, stirring occasionally.
