Chickpea Burgers

Ingredients

2 cans chickpeas, drained and rinsed (15 oz each)
1 cup breadcrumbs
1/4 cup chopped fresh parsley
3 garlic cloves, minced
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp ground coriander
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
1 tbsp lemon juice
Burger buns of choice

Instructions

1. In a large bowl, mash the drained and rinsed chickpeas with a fork or potato masher until mostly smooth.
2. Add breadcrumbs, chopped parsley, minced garlic, ground cumin, smoked paprika, ground coriander, salt, and black pepper to the mashed chickpeas.
3. Stir in olive oil and lemon juice, mixing everything together until well combined.
4. Divide the mixture into equal portions and shape them into patties.
5. Heat a grill or a frying pan over medium heat. Add a bit of oil if pan-frying.
6. Cook the patties for about 4-5 minutes on each side, until golden brown and crispy.
7. Serve warm on burger buns with your favorite toppings.

Storage

Store the cooked patties in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat the patties in a preheated oven at 350°F (175°C) for about 10 minutes or until heated through.
