Ingredients

2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
1 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp smoked paprika
1/4 tsp red pepper flakes
4 cups vegetable broth
2 cans (15 oz each) chickpeas, rinsed and drained
1 can (14.5 oz) diced tomatoes
4 cups fresh spinach
Salt and pepper to taste
1 lemon, juiced
Fresh cilantro for garnish

Instructions

1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and garlic, sauté until the onion is translucent, about 5 minutes.
3. Stir in the cumin, coriander, smoked paprika, and red pepper flakes, cooking for another 2 minutes until fragrant.
4. Pour in the vegetable broth and bring to a simmer.
5. Add the chickpeas and diced tomatoes, then let the soup simmer for 15 minutes.
6. Stir in the fresh spinach and simmer until wilted, about 3 minutes.
7. Season with salt, pepper, and lemon juice to taste.
8. Serve hot, garnished with fresh cilantro.

Storage

Store leftovers in an airtight container in the refrigerator for up to 5 days.
