Ingredients

1 (5 oz) can tuna, drained
1 cup fresh spinach, chopped
1/2 cup sharp cheddar cheese, shredded
2 tbsp mayonnaise
1 tbsp Dijon mustard
4 slices sourdough bread
2 tbsp butter
Salt and pepper to taste

Instructions

1. Preheat a skillet over medium heat.
2. In a bowl, combine tuna, mayonnaise, Dijon mustard, salt, and pepper.
3. Stir in chopped spinach and shredded cheddar cheese.
4. Butter one side of each slice of sourdough bread.
5. Spread the tuna mixture evenly over the unbuttered side of two bread slices.
6. Top with remaining bread slices, buttered side out.
7. Place sandwiches in the skillet and cook for 3-4 minutes on each side, until golden brown and cheese is melted.
