Ingredients

2 cups of fresh corn kernels
1 cup of shredded cheddar cheese
1/2 cup of sour cream
2 tablespoons of butter
1/4 cup of chopped green onions
1 tablespoon of all-purpose flour
1/2 cup of milk
1/2 teaspoon of garlic powder
1/4 teaspoon of salt
1/4 teaspoon of black pepper
1/2 cup of breadcrumbs
1 tablespoon of olive oil

Instructions

1. Preheat your oven to 350°F (175°C).
2. In a large skillet, melt the butter over medium heat.
3. Add the flour to the melted butter, stirring constantly, to make a roux.
4. Gradually whisk in the milk, ensuring no lumps form.
5. Stir in the cheddar cheese until melted and the sauce is smooth.
6. Add the sour cream, mixing well.
7. Season the sauce with garlic powder, salt, and black pepper.
8. Add the corn kernels and chopped green onions to the sauce, stirring until evenly coated.
9. Transfer the mixture to a 2-quart baking dish.
10. In a small bowl, mix the breadcrumbs with olive oil.
11. Sprinkle the breadcrumb mixture evenly on top of the casserole.
12. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
13. Allow to cool for a few minutes before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the oven at 350°F until warm, or microwave individual portions for 1-2 minutes.
