Ingredients

2 cups broccoli florets
1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs
1/4 cup all-purpose flour
2 large eggs
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil

Instructions

1. Steam the broccoli florets until tender, about 5 minutes.
2. In a large bowl, mash the steamed broccoli with a fork.
3. Stir in the cheddar cheese, Parmesan cheese, breadcrumbs, flour, eggs, garlic, salt, and pepper until well combined.
4. Shape the mixture into small patties, about 2 inches in diameter.
5. Heat olive oil in a large skillet over medium heat.
6. Fry the patties until golden brown and crisp, about 3-4 minutes per side.
7. Remove from the skillet and drain on paper towels.
8. Serve warm.

Storage

Store leftover patties in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat patties in a preheated oven at 350°F for 10 minutes or until warmed through.
