Cheesy Broccoli Cauliflower Casserole with Herb Crumble

Ingredients
2 cups broccoli florets
2 cups cauliflower florets
1 cup sharp cheddar cheese, shredded
1/2 cup Parmesan cheese, grated
1 cup heavy cream
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp nutmeg
Salt and pepper to taste
1 cup gluten-free bread crumbs
2 tbsp butter
1 tbsp fresh parsley, chopped
1 tsp thyme leaves
Instructions
1. Preheat the oven to 375°F.
2. Steam the broccoli and cauliflower florets until tender, about 5-7 minutes.
3. In a saucepan, heat the heavy cream over medium heat. Stir in the cheddar and Parmesan cheeses, garlic powder, onion powder, nutmeg, salt, and pepper. Cook until the cheese is melted and the sauce is smooth.
4. Combine the cooked broccoli and cauliflower with the cheese sauce in a large bowl.
5. Transfer the mixture to a greased baking dish.
6. In a separate bowl, mix the bread crumbs with melted butter, parsley, and thyme.
7. Sprinkle the herb crumble over the casserole.
8. Bake in the preheated oven for 20-25 minutes until the top is golden brown and crispy.
9. Let the casserole cool for a few minutes before serving.
Storage
Store leftover casserole in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual portions in the microwave for 1-2 minutes, or until heated through. Alternatively, reheat in a 350°F oven for 10-15 minutes.
