Ingredients

2 cups broccoli florets
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 cup breadcrumbs
2 large eggs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/4 teaspoon salt
1 tablespoon olive oil

Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Steam broccoli florets until tender, about 5 minutes, then finely chop them.
3. In a large bowl, combine chopped broccoli, cheddar cheese, Parmesan cheese, garlic powder, onion powder, black pepper, and salt.
4. In a separate bowl, beat the eggs and add to the broccoli mixture, stirring to combine.
5. Form the mixture into small bite-sized balls and roll them in breadcrumbs until fully coated.
6. Place the balls on the prepared baking sheet and drizzle with olive oil.
7. Bake for 18-20 minutes, or until golden brown and crispy.
8. Allow to cool slightly before serving.

Reheating

Reheat bites in a preheated oven at 350°F (175°C) for 10 minutes or until heated through.
