Ingredients
2 cups black beans, cooked and drained
8 oz mushrooms, finely chopped
1/2 cup breadcrumbs
1/4 cup red onion, finely chopped
2 cloves garlic, minced
1 tbsp soy sauce
2 tbsp olive oil
1 tsp smoked paprika
1/2 tsp ground cumin
Salt and pepper to taste
4 charcoal-infused vegan buns
Lettuce, to serve
Tomato slices, to serve
Avocado slices, to serve
Vegan mayo, to serve
Instructions
1. Preheat oven to 375°F.
2. In a large skillet, heat olive oil over medium heat. Add mushrooms, onion, and garlic, and sauté until mushrooms are tender.
3. In a large bowl, mash black beans using a fork or potato masher, leaving some chunks for texture.
4. Add sautéed vegetables to the black beans along with breadcrumbs, soy sauce, smoked paprika, cumin, salt, and pepper. Mix until well combined.
5. Form mixture into 4 patties.
6. Place patties on a baking sheet lined with parchment paper and bake for 20 minutes, flipping halfway through.
7. Lightly toast charcoal-infused buns in a toaster or oven.
8. Assemble burgers with lettuce, tomato slices, avocado slices, and vegan mayo.
9. Serve immediately and enjoy!
Storage
Store leftover patties in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat patties in a preheated oven at 350°F for 10 minutes or until heated through.
