Carrot and Pea Mash

Ingredients
2 cups of peeled and diced carrots
1 cup of fresh or frozen peas
1/2 cup of water
1 tbsp of unsalted butter (optional)
Instructions
1. Peel and dice the carrots into small pieces.
2. In a steamer basket over boiling water, add the carrots and steam for about 10 minutes.
3. Add the peas to the steamer and continue to steam for another 5 minutes, or until both carrots and peas are tender.
4. Transfer the steamed vegetables into a blender or food processor.
5. Add 1/2 cup of water and blend until smooth. For a creamier texture, you can add a tablespoon of unsalted butter.
6. Allow the mash to cool before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stovetop or in the microwave until just warmed through, stirring frequently.
