Caprese Stuffed Avocados

Ingredients

2 ripe avocados
4 oz fresh mozzarella balls, halved
1 cup cherry tomatoes, halved
1/4 cup fresh basil leaves, torn
2 tbsp balsamic reduction
1 tbsp olive oil
Salt and pepper to taste

Instructions

1. Slice the avocados in half and remove the pits. Gently scoop out some of the flesh to create space for the filling.
2. In a medium bowl, combine mozzarella balls, cherry tomatoes, and basil. Drizzle with olive oil and season with salt and pepper, tossing gently to mix.
3. Fill each avocado half with the mozzarella mixture.
4. Drizzle balsamic reduction over the stuffed avocados.
5. Serve immediately and enjoy this fresh and creamy delight.
