Caprese Chicken Skillet

Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
Salt and freshly ground black pepper to taste
2 cups cherry tomatoes, halved
8 ounces fresh mozzarella, sliced
1/2 cup fresh basil leaves
2 cloves garlic, minced
1 tablespoon balsamic reduction
1 tablespoon fresh lemon juice
Instructions
1. Heat olive oil in a large skillet over medium-high heat.
2. Season chicken breasts with salt and pepper, then add to the skillet.
3. Cook the chicken for about 5-6 minutes per side until golden and cooked through.
4. Remove chicken from the skillet and set aside.
5. In the same skillet, add garlic and sauté for 1 minute until fragrant.
6. Add cherry tomatoes to the skillet and cook until they soften, about 3-4 minutes.
7. Return the chicken to the skillet and top each breast with slices of mozzarella.
8. Cover the skillet with a lid and cook until the cheese melts, about 2-3 minutes.
9. Drizzle balsamic reduction and lemon juice over the chicken.
10. Garnish with fresh basil leaves before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently in a skillet over low heat until warmed through. Alternatively, microwave on medium power for 2-3 minutes.
