Brussels Sprouts with Maple Balsamic Glaze

Ingredients
1 1/2 lbs Brussels sprouts, trimmed and halved
2 tbsp olive oil
1/4 cup balsamic vinegar
3 tbsp pure maple syrup
Salt and pepper to taste
1/4 cup chopped pecans (optional)
Instructions
1. Preheat your oven to 400°F (200°C).
2. In a large bowl, toss Brussels sprouts with olive oil, salt, and pepper until evenly coated.
3. Spread the Brussels sprouts on a baking sheet in a single layer.
4. Roast in the oven for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.
5. While the sprouts are roasting, combine balsamic vinegar and maple syrup in a small saucepan over medium heat.
6. Bring to a simmer and reduce, stirring occasionally, until slightly thickened, about 5 minutes.
7. Remove Brussels sprouts from the oven and transfer to a serving dish.
8. Drizzle the maple balsamic glaze over the roasted Brussels sprouts.
9. Top with chopped pecans if using, and serve warm.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 350°F (175°C) for 10-12 minutes or until warmed through.
