Brown Sugar Glazed Meatloaf

Ingredients
1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 pounds ground beef
1/2 cup milk
2 large eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion, chopped
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine cracker crumbs
Instructions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Lightly grease a 5x9-inch loaf pan.
3. Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
4. In a mixing bowl, thoroughly mix together the ground beef, milk, eggs, salt, pepper, onion, ground ginger, and cracker crumbs.
5. Shape the meat mixture into a loaf and place on top of the ketchup and brown sugar.
6. Bake in preheated oven for 1 hour or until juices are clear.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Preheat oven to 325°F (165°C). Place slices of meatloaf in a baking dish and cover with aluminum foil. Heat for 20 minutes or until warmed through.
