Ingredients
2 heads fresh broccoli (about 1.5 lbs)
2 tbsp olive oil
1/4 tsp salt
1/4 tsp black pepper
1 lemon, juiced
2 tbsp tahini
1 clove garlic, minced
1 tbsp water
1/4 cup slivered almonds, toasted
Instructions
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Cut broccoli into florets and toss with olive oil, salt, and pepper in a large bowl.
3. Spread the broccoli evenly on the prepared baking sheet and roast for 20 minutes, or until tender and slightly crispy.
4. In a small bowl, whisk together lemon juice, tahini, minced garlic, and water until smooth to make the drizzle.
5. Once broccoli is roasted, place it on a serving platter and drizzle with the lemon-tahini sauce.
6. Sprinkle toasted slivered almonds over the top before serving.
Storage
Store any leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 350°F for 10 minutes or until warm, or microwave on medium heat for 1-2 minutes.
