Broccoli Cheddar Soup

Ingredients

2 cups broccoli florets
1 cup diced onions
2 cloves garlic, minced
1/4 cup butter
1/4 cup all-purpose flour
2 cups chicken broth
2 cups whole milk
2 cups sharp cheddar cheese, shredded
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

1. Melt butter in a large pot over medium heat. Add onions and garlic and sauté until soft.
2. Stir in flour, cooking until golden brown to create a roux.
3. Gradually whisk in chicken broth and milk, bringing to a simmer.
4. Add broccoli florets, cooking until tender, about 8-10 minutes.
5. Stir in cheddar cheese until melted and soup is smooth. Season with salt and pepper to taste.

Storage

Store the soup in an airtight container in the refrigerator for up to 3 days.
