Broccoli and Cheddar Delight

Ingredients
4 cups chopped fresh broccoli
2 cups shredded cheddar cheese
1 can (10.5 oz) condensed cream of mushroom soup
1/2 cup mayonnaise
1 large egg, beaten
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup crushed butter crackers
2 tablespoons butter, melted
Instructions
1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
2. In a large pot, boil or steam broccoli until just tender, about 5 minutes. Drain well.
3. In a large bowl, combine the cream of mushroom soup, mayonnaise, beaten egg, salt, and black pepper.
4. Mix in the drained broccoli and half of the shredded cheddar cheese until evenly coated.
5. Spread the broccoli mixture into the prepared baking dish and sprinkle the remaining cheese on top.
6. In a small bowl, mix the crushed butter crackers with the melted butter, then sprinkle over the casserole.
7. Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the cheese is bubbly.
8. Allow to cool for a few minutes before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual portions in the microwave for 2-3 minutes or until heated through, or reheat the entire casserole in the oven at 350°F (175°C) for 15-20 minutes.
