Broccoli & Cheddar Delight Soup

Ingredients

2 tbsp unsalted butter
1 cup chopped onion
2 cloves garlic, minced
4 cups broccoli florets
3 cups chicken broth
2 cups half-and-half
2 cups shredded cheddar cheese
1 tsp salt
1/2 tsp black pepper
1/4 tsp nutmeg
1 tbsp cornstarch
2 tbsp cold water

Instructions

1. Melt butter in a large pot over medium heat.
2. Add onions and garlic, sauté until onions are translucent.
3. Stir in broccoli and chicken broth, bring to a boil.
4. Reduce heat to a simmer, cover, and cook until broccoli is tender, about 10 minutes.
5. Blend the soup with an immersion blender until smooth.
6. Whisk together half-and-half, cornstarch, and water in a bowl until smooth, then add to the pot.
7. Stir in cheddar cheese, salt, pepper, and nutmeg until the cheese is melted and the soup is heated through.
8. Serve hot with a sprinkle of extra cheddar if desired.

Storage

Store in an airtight container in the refrigerator for up to 3 days.
