Bibimbap

Bibimbap is a vibrant and wholesome Korean rice dish topped with a variety of sautéed vegetables, seasoned beef slices, and a perfectly fried egg. This delightful bowl is traditionally mixed with spicy gochujang, creating a harmonious blend of flavors and textures.

Ingredients

1 cup white rice
2 tbsp sesame oil
1 cup spinach
1 cup bean sprouts
1 large carrot, julienned
1 zucchini, julienned
1 lb beef sirloin, thinly sliced
2 tbsp soy sauce
1 tbsp sugar
2 cloves garlic, minced
4 eggs
4 tbsp gochujang
2 green onions, sliced
1 tbsp toasted sesame seeds
Salt and pepper to taste

Instructions

1. Cook the rice according to package instructions and set aside.
2. In a large pan, heat 1 tablespoon of sesame oil over medium heat. Sauté spinach until wilted, about 2 minutes. Remove and set aside.
3. In the same pan, add bean sprouts and a pinch of salt. Sauté for 2-3 minutes. Remove and set aside.
4. Add carrots and zucchini to the pan, sauté with a bit of sesame oil until tender, about 3-4 minutes. Remove and set aside.
5. In a bowl, mix beef slices with soy sauce, sugar, and garlic. Sauté beef in the pan until cooked through and slightly caramelized, about 5 minutes. Remove and set aside.
6. In a clean pan, fry eggs sunny side up.
7. To assemble, place rice in bowls, arrange vegetables, beef, and fried egg on top. Add a dollop of gochujang, sprinkle with green onions and sesame seeds. Mix just before eating.

Storage

Store leftovers in an airtight container in the refrigerator for up to 2 days.

Reheating

Reheat in a microwave on medium power for 1-2 minutes, or until heated through.
