Ingredients

1 1/2 lbs beef sirloin steak, cut into thin strips
2 tablespoons olive oil
1/4 cup butter
1 large onion, thinly sliced
8 oz mushrooms, sliced
2 tablespoons all-purpose flour
1 1/2 cups beef broth
1 cup sour cream
2 teaspoons Dijon mustard
Salt and pepper to taste
12 oz egg noodles
2 tablespoons chopped fresh parsley

Instructions

1. In a large skillet, heat olive oil over medium-high heat. Add beef strips and cook until browned. Remove and set aside.
2. In the same skillet, melt butter. Add onions and cook until translucent. Add mushrooms and cook until softened.
3. Stir in flour and cook for 1 minute. Gradually add beef broth, stirring constantly until thickened.
4. Reduce heat to low and return beef to the skillet. Stir in sour cream and Dijon mustard. Simmer gently for 5 minutes. Season with salt and pepper.
5. Cook egg noodles according to package instructions. Drain and serve topped with beef mixture.
6. Garnish with chopped parsley before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently in a skillet over low heat, stirring occasionally until warmed through. Add a splash of beef broth if needed.
