Beef and Broccoli

This slow cooker beef and broccoli offers a simple way to enjoy a takeout favorite at home, featuring tender beef slices and crisp broccoli florets in a savory sauce, perfect over steamed rice.

Ingredients

1.5 lbs beef chuck roast, thinly sliced
2 cups broccoli florets
1/2 cup soy sauce
1/4 cup oyster sauce
1/4 cup beef broth
3 tbsp brown sugar
2 tbsp cornstarch
4 cloves garlic, minced
1-inch piece of ginger, minced
1 tbsp sesame oil
2 tbsp vegetable oil
Salt and pepper to taste
Cooked rice for serving

Instructions

1. In a bowl, mix soy sauce, oyster sauce, beef broth, brown sugar, and sesame oil.
2. Place beef slices in the slow cooker and pour the sauce over them.
3. Add minced garlic and ginger to the slow cooker. Stir to combine.
4. Cook on low for 4 hours, or until the beef is tender.
5. Mix cornstarch with a small amount of water to create a slurry, then add to the slow cooker. Stir well.
6. Add broccoli florets to the slow cooker and cook for another 30 minutes, or until broccoli is tender-crisp.
7. Serve hot over steamed rice.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the microwave or on the stove over low heat until warmed through.
