Prep time: 1 hour
Cook time: 15 minutes
Serves: 12

Ingredients

1 1/2 cups warm water (110°F)
1 packet active dry yeast (2 1/4 teaspoons)
1 tablespoon granulated sugar
4 cups all-purpose flour
1 teaspoon salt
1/4 cup baking soda (for boiling water)
10 cups water (for boiling)
2 tablespoons melted butter
Coarse sea salt for sprinkling

Instructions

1. In a large bowl, combine the warm water, yeast, and sugar. Stir and let sit until the mixture is bubbly, about 5 minutes.
2. Add the flour and salt to the yeast mixture. Mix until a dough forms, then knead on a floured surface for 5-7 minutes until smooth.
3. Shape the dough into a ball, place it in a greased bowl, cover with a towel, and let rise until doubled in size, about 1 hour.
4. Preheat oven to 450°F and line a baking sheet with parchment paper.
5. Bring 10 cups of water and the baking soda to a boil in a large pot.
6. Punch down the risen dough and divide it into 24 equal pieces. Shape each piece into a ball and use a sharp knife to gently score basketball lines on each.
7. Boil each dough ball in the baking soda water for 30 seconds, then transfer to the prepared baking sheet.
8. Brush each ball with melted butter and sprinkle with coarse sea salt.
9. Bake in the preheated oven for 12-15 minutes, or until golden brown and firm.
