Banana Pancake Bites
Sweet and fluffy mini pancakes infused with ripe bananas and a hint of honey, ideal for a delightful breakfast or a satisfying snack.

Ingredients
1 cup all-purpose flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 ripe bananas, mashed
1 large egg
1/3 cup milk
2 tbsp honey
1 tsp vanilla extract
2 tbsp unsalted butter, melted
Butter or oil for cooking
Instructions
1. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
2. In a separate bowl, mash the bananas until smooth. Add the egg, milk, honey, vanilla extract, and melted butter, and mix until well combined.
3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
5. For each pancake bite, drop about 1 tablespoon of batter onto the skillet.
6. Cook until bubbles form on the surface and the edges look set, about 1-2 minutes. Flip and cook for another 1-2 minutes, until golden brown.
7. Remove from skillet and serve warm.
Storage
Store leftover pancake bites in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place pancake bites on a microwave-safe plate and microwave for 20-30 seconds or until warmed through.
