Baked Potato Chips

Ingredients
2 lbs russet potatoes
2 tbsp olive oil
1 tsp sea salt
1 tsp paprika (optional)
1 tsp garlic powder (optional)
Instructions
1. Preheat your oven to 400°F (200°C).
2. Wash and peel the potatoes.
3. Using a mandoline or sharp knife, slice the potatoes into thin, uniform slices, about 1/8 inch thick.
4. In a large bowl, toss the potato slices with olive oil, sea salt, and your choice of paprika or garlic powder.
5. Arrange the slices in a single layer on a baking sheet lined with parchment paper.
6. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
7. Remove from oven and let cool on a wire rack before serving.
Storage
Store the leftover chips in an airtight container at room temperature for up to 3 days.
Reheating
To reheat, place the chips in a single layer on a baking sheet and bake at 350°F (175°C) for 5 minutes or until warmed through and crispy again.
