Baked Cod with Tomato and Herb Crust

Ingredients
1.5 lbs cod fillets
1 cup cherry tomatoes, halved
1/2 cup breadcrumbs
2 tbsp olive oil
1 tbsp fresh parsley, chopped
1 tbsp fresh basil, chopped
1 tsp lemon zest
1 garlic clove, minced
Salt and pepper to taste
Lemon wedges for serving
Instructions
1. Preheat the oven to 400°F (200°C).
2. Place the cod fillets on a baking sheet lined with parchment paper.
3. In a bowl, combine cherry tomatoes, breadcrumbs, olive oil, parsley, basil, lemon zest, and garlic. Mix until well combined.
4. Season the cod fillets with salt and pepper.
5. Spread the tomato and herb mixture evenly over the top of the cod fillets.
6. Bake in the preheated oven for 15-20 minutes, until the cod is cooked through and the topping is golden brown.
7. Serve with lemon wedges on the side.
Storage
Store any leftover baked cod in an airtight container in the refrigerator for up to 2 days.
Reheating
To reheat, place the leftover cod in a preheated oven at 350°F (175°C) for about 10 minutes, or until warmed through.
