Ingredients

2 ripe avocados
1 cup panko breadcrumbs
1/2 cup all-purpose flour
2 eggs
1/2 teaspoon garlic powder
1/4 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper

Instructions

1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. 2. Cut the avocados in half, remove the pit, and slice each half into wedges. 3. Prepare the breading station: Place the flour in one shallow bowl, beat the eggs in a second bowl, and mix panko breadcrumbs with garlic powder, smoked paprika, salt, and black pepper in a third bowl. 4. Dredge each avocado slice in flour, dip in the beaten eggs, and then coat with the panko breadcrumb mixture. 5. Place the coated avocado slices on the prepared baking sheet and lightly spray with cooking spray. 6. Bake in the preheated oven for 15 minutes, flipping halfway through, until golden brown and crispy. 7. Serve immediately with your favorite tangy dipping sauce.
