Ingredients

2 ripe avocados
2 cloves garlic, minced
2 tablespoons lemon juice

8 oz of your favorite pasta
1 cup cherry tomatoes, halved
1/2 cup spinach leaves

Instructions

1. Cook pasta according to package instructions and drain.
2. In a blender, combine avocados, garlic, lemon juice, and olive oil. Blend until smooth and creamy.
3. Season the sauce with salt and black pepper to taste.
4. In a large bowl, toss the cooked pasta with avocado sauce, cherry tomatoes, and spinach leaves until well combined.
