Ingredients

1 1/2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1 tbsp sugar
1/2 cup ripe avocado, mashed (about 1 medium avocado)
1 cup milk
1 large egg
2 tbsp unsalted butter, melted
1 tsp vanilla extract
Maple syrup, for serving
Fresh berries, for serving

Instructions

1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
2. In another bowl, blend the mashed avocado, milk, egg, melted butter, and vanilla extract until smooth.
3. Pour the wet ingredients into the dry ingredients, stirring until just combined.
4. Heat a non-stick skillet over medium heat and lightly grease it.
5. Pour 1/4 cup of batter onto the skillet for each pancake.
6. Cook until bubbles form on the surface, then flip and cook until golden brown.
7. Serve warm with maple syrup and fresh berries.
