Ingredients

6 large eggs
2 ripe avocados
1/4 cup mayonnaise
1/4 cup finely chopped red onion
1 tablespoon lime juice
1 tablespoon chopped fresh cilantro

Whole grain bread slices for serving

Instructions

1. Bring a pot of water to a boil and carefully add the eggs. Boil for 10 minutes, then transfer to an ice bath to cool.
2. Once cooled, peel the eggs and chop them into small pieces.
3. In a large bowl, mash the avocados until smooth.
4. Add the chopped eggs, mayonnaise, red onion, lime juice, and cilantro to the mashed avocados. Mix until well combined.
5. Season with salt and pepper to taste.
