Avocado and Shrimp Cocktail Cups

These Avocado and Shrimp Cocktail Cups are a delightful blend of creamy avocado and succulent shrimp nestled in crispy wonton cups. Perfect for entertaining, they offer a balance of freshness and crunch with a zesty hint of lime.

Ingredients

12 wonton wrappers
8 oz cooked shrimp, peeled and deveined
2 ripe avocados, diced
1/4 cup red onion, finely chopped
1/4 cup cilantro, chopped
1 lime, juiced
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1 clove garlic, minced

Instructions

1. Preheat oven to 350°F (175°C).
2. Place wonton wrappers in a muffin tin, pressing gently to form cups.
3. Bake for 8-10 minutes or until golden brown and crispy. Remove and let cool.
4. In a medium bowl, combine diced avocado, shrimp, red onion, cilantro, lime juice, salt, pepper, olive oil, and minced garlic. Toss gently to combine.
5. Spoon the avocado and shrimp mixture into the cooled wonton cups.
6. Serve immediately and enjoy!

Storage

Store any leftover avocado and shrimp mixture in an airtight container in the refrigerator for up to 2 days. Wonton cups should be stored separately in an airtight container at room temperature.

Reheating

To reheat wonton cups, place them in a preheated oven at 350°F for 3-5 minutes until crispy again. Do not reheat the avocado and shrimp mixture.
