Avocado and Mango Salad

This vibrant avocado and mango salad is a refreshing side dish that combines the creaminess of avocados with the tropical sweetness of mangoes, all brought together with a tangy lime and chili dressing.

Ingredients

2 ripe avocados, peeled and diced
2 ripe mangoes, peeled and diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro leaves
1/4 cup toasted cashews
1 medium jalapeño, seeded and finely chopped
2 tbsp fresh lime juice
1 tbsp olive oil
1 tsp honey
1/2 tsp ground cumin
1/4 tsp chili powder
Salt and pepper to taste

Instructions

1. In a large bowl, combine diced avocados, mangoes, red onion, fresh cilantro, and jalapeño.
2. In a small bowl, whisk together lime juice, olive oil, honey, ground cumin, chili powder, salt, and pepper.
3. Pour the dressing over the avocado and mango mixture, and gently toss to combine.
4. Top the salad with toasted cashews just before serving.
5. Serve immediately for best flavor and texture.

Storage

Store leftovers in an airtight container in the refrigerator for up to 2 days. Best consumed fresh.

Reheating

This salad is best served fresh and does not require reheating.
