Ingredients
2 cups old-fashioned oats
1/2 cup canned pumpkin puree
1/4 cup maple syrup
2 large eggs
1 1/2 cups whole milk
1/2 cup chopped pecans
1/4 cup raisins
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp salt
1/2 tsp baking powder
1/2 cup dried cranberries
Instructions
1. Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking dish.
2. In a large bowl, whisk together the eggs, milk, pumpkin puree, maple syrup, and vanilla extract until well combined.
3. In another bowl, mix the oats, cinnamon, nutmeg, ginger, salt, and baking powder.
4. Add the dry ingredients to the wet ingredients and stir until just combined.
5. Fold in the pecans, raisins, and cranberries into the oat mixture.
6. Pour the mixture into the prepared baking dish and spread evenly.
7. Bake for 35-40 minutes or until the top is golden brown and the center is set.
8. Let cool slightly before slicing and serving.
Storage
Store any leftovers in an airtight container in the refrigerator for up to 4 days.
Reheating
To reheat, place a serving in the microwave for about 60-90 seconds or until heated through.
