Autumn Harvest Sweet Potato Pie

Ingredients
2 lbs sweet potatoes
1 cup granulated sugar
1/2 cup unsalted butter, softened
1/2 cup milk
2 large eggs
1 tbsp maple syrup
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/2 tsp salt
9-inch pie crust, unbaked
Instructions
1. Preheat oven to 350°F.
2. Boil sweet potatoes in a pot until tender, about 40 minutes.
3. Peel and mash the sweet potatoes in a large bowl.
4. Add sugar, butter, milk, eggs, maple syrup, vanilla extract, cinnamon, nutmeg, ginger, and salt to the mashed sweet potatoes and mix until smooth.
5. Pour the mixture into the pie crust.
6. Bake in preheated oven for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean.
7. Allow the pie to cool before serving.
Storage
Store the pie in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat slices in the microwave for 30 seconds or in a 350°F oven for 10-12 minutes until warm.
