Authentic Mexican Sopa

Ingredients
1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 tsp cumin
1 tsp dried oregano
1/2 tsp paprika
4 cups chicken broth
1 cup canned tomatoes, crushed
1 cup corn kernels
1 cup cooked chicken, shredded
1/2 cup red bell pepper, chopped
1 tbsp lime juice
Salt and pepper to taste
1/4 cup fresh cilantro, chopped
1 avocado, sliced (optional)
2 oz queso fresco, crumbled (optional)
Instructions
1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
2. Stir in minced garlic, cumin, oregano, and paprika. Cook for 1 minute until fragrant.
3. Pour in chicken broth and add crushed tomatoes. Bring to a simmer.
4. Add corn, shredded chicken, and red bell pepper. Simmer for 15 minutes until vegetables are tender.
5. Season with lime juice, salt, and pepper. Stir in fresh cilantro before serving.
6. Serve hot, garnished with avocado slices and crumbled queso fresco if desired.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a saucepan over medium heat until warmed through, stirring occasionally.
