Authentic Cheese Fondue

Ingredients
1 lb sharp cheddar cheese, shredded
1/2 lb Monterey Jack cheese, shredded
1 tablespoon cornstarch
1 cup whole milk
1/2 cup diced tomatoes with green chilies
1/4 cup chopped green onions
1 teaspoon ground cumin
1/2 teaspoon garlic powder
Salt and pepper to taste
Instructions
1. In a medium bowl, toss the shredded cheeses with cornstarch until evenly coated.
2. In a saucepan over medium heat, pour in the milk and warm until it begins to steam.
3. Gradually add the cheese mixture to the milk, stirring constantly until fully melted and smooth.
4. Stir in the diced tomatoes with green chilies, green onions, ground cumin, and garlic powder.
5. Season with salt and pepper, adjusting to taste.
6. Continue stirring occasionally until the mixture is creamy and well combined.
7. Transfer the queso dip to a serving bowl or a slow cooker set to warm.
Storage
Store leftover queso dip in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat the queso dip in a saucepan over low heat, stirring occasionally, until warmed through. Alternatively, microwave in 30-second intervals, stirring between each, until warm.
