Ingredients

2 medium zucchinis, grated
1 teaspoon salt
1/2 cup all-purpose flour
1/2 cup grated Parmesan cheese
1/4 cup finely chopped fresh parsley
1/4 cup finely chopped fresh dill
2 large eggs, beaten
1/4 teaspoon ground black pepper
2 tablespoons olive oil

Instructions

1. Grate the zucchini and sprinkle with salt, letting it sit for about 10 minutes.
2. Squeeze out excess moisture from the zucchini using a clean kitchen towel.
3. In a large bowl, combine the zucchini, flour, Parmesan, parsley, dill, eggs, and black pepper.
