Zesty Turkey Meatballs with Lemon Herb Sauce

Ingredients
1 lb ground turkey
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 large egg
1/4 cup chopped fresh parsley
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1/2 cup chicken broth
1/4 cup freshly squeezed lemon juice
1 tbsp finely chopped fresh dill
1 tbsp finely chopped basil
1/4 cup heavy cream
Instructions
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, garlic, egg, parsley, salt, and pepper.
3. Form the mixture into 1.5-inch meatballs and place on the prepared baking sheet.
4. Heat olive oil in a large skillet over medium-high heat.
5. Add meatballs to the skillet, browning on all sides for 5-6 minutes.
6. Transfer meatballs to the baking sheet and bake in the oven for 15 minutes.
7. In the same skillet, add chicken broth, lemon juice, dill, and basil, bringing to a simmer.
8. Stir in heavy cream and cook until slightly thickened.
9. Return meatballs to the skillet, coating them with the sauce.
10. Serve warm with extra sauce drizzled over the top.
Storage
Allow meatballs to cool completely, then store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat meatballs in a skillet over medium heat with a splash of chicken broth until warmed through, or microwave on medium power until hot.
