Zesty Tuna Quinoa Patties
Deliciously healthy tuna patties mixed with quinoa, a squeeze of lemon, and a hint of garlic, perfect for a quick and nutritious meal.

Ingredients
1 can (5 oz) tuna in water, drained
1 cup cooked quinoa
1 large egg
1/4 cup breadcrumbs
1/4 cup chopped parsley
1/4 cup finely chopped onion
2 cloves garlic, minced
1 tbsp lemon juice
1 tsp lemon zest
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
Instructions
1. In a large bowl, combine drained tuna, cooked quinoa, egg, breadcrumbs, parsley, onion, garlic, lemon juice, lemon zest, salt, and pepper. Mix well until all ingredients are thoroughly combined.
2. Shape the mixture into 8 small patties using your hands, pressing them firmly to ensure they hold together.
3. Heat olive oil in a large skillet over medium heat.
4. Place patties in the skillet and cook for about 4 minutes on each side, or until they are golden brown and cooked through.
5. Remove from skillet and transfer to a paper towel-lined plate to cool slightly before serving.
Storage
Store leftover patties in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat patties in a skillet over medium heat for 2-3 minutes on each side, or until heated through. Alternatively, you can reheat them in the oven at 350°F for 10 minutes.
