Ingredients
1 unbaked 9-inch pie crust
1 tbsp olive oil
3 cups fresh spinach leaves
1/2 cup sun-dried tomatoes, thinly sliced
1/4 cup onions, finely chopped
3/4 cup crumbled feta cheese
5 large eggs
1 cup half-and-half
1 tsp salt
1/2 tsp black pepper
1/4 tsp nutmeg
1 tbsp fresh basil, chopped
Instructions
1. Preheat the oven to 375°F (190°C).
2. Place the unbaked pie crust into a 9-inch pie dish and set aside.
3. Heat olive oil in a skillet over medium heat. Add chopped onions and sauté until translucent, about 3 minutes.
4. Add spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and stir in sun-dried tomatoes.
5. In a large bowl, whisk together eggs, half-and-half, salt, pepper, and nutmeg until well combined.
6. Spread the spinach and tomato mixture evenly over the pie crust. Sprinkle feta cheese on top.
