Zesty Southwest Macaroni Salad

Ingredients
16 oz elbow macaroni
1 cup frozen corn, thawed
1 red bell pepper, diced
1/2 cup red onion, finely chopped
1/2 cup black beans, rinsed and drained
1/4 cup fresh cilantro, chopped
1/4 cup lime juice
1/4 cup olive oil
1 tsp ground cumin
1 tsp chili powder
1/2 tsp garlic powder
Salt and pepper to taste
Instructions
1. Cook the macaroni according to package instructions, then drain and rinse under cold water to stop cooking.
2. In a large bowl, combine the macaroni, corn, red bell pepper, red onion, black beans, and cilantro.
3. In a small mixing bowl, whisk together the lime juice, olive oil, ground cumin, chili powder, garlic powder, salt, and pepper.
4. Pour the dressing over the macaroni mixture and toss until everything is evenly coated.
5. Chill the salad in the refrigerator for at least 1 hour before serving to allow the flavors to meld.
Storage
Store the macaroni salad in an airtight container in the refrigerator for up to 3 days.
Reheating
For best results, allow the salad to come to room temperature. If desired, reheat in the microwave for 20 seconds if you prefer it warm.
