Ingredients
1 lb large shrimp, peeled and deveined
1 cup all-purpose flour
1/2 cup cornstarch
1 tsp salt
1/2 tsp black pepper
1/2 cup buttermilk
1/2 cup mayonnaise
1/4 cup sweet chili sauce
1 tbsp sriracha
1 tsp lime juice
Vegetable oil for frying
Chopped green onions for garnish
Instructions
1. In a large bowl, combine flour, cornstarch, salt, and black pepper.
2. Dip shrimp in buttermilk, then coat in flour mixture.
3. Heat vegetable oil in a deep fryer or large pot to 350°F.
4. Fry shrimp in batches until golden brown and crispy, about 3-4 minutes.
5. In a separate bowl, mix mayonnaise, sweet chili sauce, sriracha, and lime juice to make the sauce.
6. Toss fried shrimp in the sauce until well coated.
7. Garnish with chopped green onions before serving.
Storage
