Ingredients

1 1/2 cups all-purpose flour
1/2 cup almond flour
1 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, melted
1/4 cup buttermilk
2 large eggs
1 tsp vanilla extract
1 tbsp orange zest
1 1/2 cups rhubarb, diced
1/2 cup sliced almonds

Instructions

1. Preheat oven to 350°F and line a muffin tin with paper liners.
2. In a large bowl, whisk together all-purpose flour, almond flour, sugar, baking powder, baking soda, and salt.
3. In another bowl, combine melted butter, buttermilk, eggs, vanilla extract, and orange zest.
4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
5. Fold in the diced rhubarb and sliced almonds.
6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
