Zesty Mediterranean Tuna Salad Sandwich

Ingredients
2 cans of tuna, drained
1/4 cup sun-dried tomatoes, chopped
1/4 cup Kalamata olives, pitted and sliced
1/4 cup red onion, finely diced
1/4 cup celery, chopped
1/4 cup fresh parsley, chopped
1/4 cup mayonnaise
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon dried oregano
Salt and pepper to taste
8 slices of whole grain bread
Butter, for toasting
Instructions
1. In a large mixing bowl, combine the drained tuna, sun-dried tomatoes, olives, red onion, celery, and parsley.
2. In a small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, oregano, salt, and pepper.
3. Pour the dressing over the tuna mixture and gently combine until everything is well coated.
4. Butter one side of each slice of bread.
5. Divide the tuna salad evenly among four slices of bread on the non-buttered side.
6. Top with the remaining slices, buttered side up.
7. Heat a skillet over medium-high heat and grill each sandwich for 3-4 minutes on each side until golden brown and heated through.
Storage
Store any leftover tuna salad in an airtight container in the refrigerator for up to 3 days.
Reheating
To enjoy warm, simply reheat the sandwiches on a skillet over medium heat for 2-3 minutes per side until heated through.
